SOM TUM - Gai Yang

Spicy thai salad, in which you can use carrots or papaya for the base this time I chose to try it with carrots, and was absolutely just as delicious as with papaya.


Ingredients 

  • 2     - Carrots, shredded
  • 1     - lime
  • 1     - clove garlic, smashed
  • 2/7 - bird chilies
  • 1/2 -sprig of spring onion
  • 1    - tomato, diced
  • 5    - green beans beans, quartered
  • -       soy sauce to taste


the best way to make this salad is with a pestle and mortar

put the smashed garlic in the mortar and add the diced tomato and beans
grind only a little bit to release the juices, at this point add about 2 tbl spoons of lime juice.

Add the chilies pre cut them depending on how spicy you like your food, the more you cut/ grind them them, the more heavily spiced your meal will be.

Toss everything from the mortar into a bowl with the shredded carrots and spring onion and mix well.

add soy sauce and lime to taste and serve on lettuce or cabbage.

My substitute for this was a vegan protein patty from my local asian supermarket fried in peanut oil with garlic and fresh chili seeds.

Tom Yum




Ingredients:



1 Lemongrass stick minced
2 - kaffir lime leaves whole
3-6 chili, mixture of whole and minced
Ginger sliced or grated
1 tbl spoon fresh basil
1 tbl spoon fresh coriander
1 handful of button mushrooms quartered
1 spring onion sprout sliced
1 tomato diced
1/2 garlic clove minced







Step 1.

Boil 2 1/2 cups of water in a skillet or pan, toss in all of the fresh spice and herb ingredients,
(everything except the mushrooms and tomatoes)

Step 2.

Boil untill all of the fragrance is released then add the mushrooms and tomatoes and bring down to medium heat untill the mushrooms feel done.

add soy sauce to taste and serve with rice or on its own.


Larb

What you need:

2 tablespoons sliced shallot
2 tablespoons finely chopped spring onion
1/4 cup chopped mint leaves
2-5 fresh chopped chili, depending on how spicy you like larb
1 fresh lime
2-3 tablespoons soy sauce
1 cup of TVP mince
1 onion quartered

Garnish:

serve with a good portion of fresh cabbage, and add green beans, parsley, sliced radish, cucumber, & coriander leaves.



1. Soak the TVP in hot water for half an hour.

2. Fry the tvp in a wok/ pan with the soy sauce and 2 tablespoons of lime juice with some coriander and chili, take off heat and add the remaining ingredients.

3. Put back on the heat until the onions are a medium tenderness then add the rest of the lime and simmer for about one miniute, take off heat.

4. Garnish.

5. traditional larb is generally served cold, so in the fridge it goes for an hour or so, or just eat it hot.

it also goes fantastically with jasmine rice.

Falafel Salad

1. Make falafel.

Ingredients:
nb: I dont measure and you don't need to.

Onion finely chopped Coriander
Button Mushrooms sliced Veggie protein patty
Garlic finely chopped Peanut Oil
Ginger, grated
Cherry Tomatoes, halved
Pickled Pepadews, whole
Fresh Chili finely chopped
Sweet chili sauce
Lettuce leaves
Chapatti or Indian Wrap

1. Marinate the veggie protein in the sweet chili sauce this should only take 10 minutes

2. Heat peanut oil in a pan throw in the onions, garlic, ginger and and chili and cook till soft toss in the mushrooms with a pinch of salt to bring out the juices and saute' until golden.

3. BBQ the Veggie Protein or fry in a pan with minimal oil, then cut into strips.

4. Put the lettuce, pepadews, and cherry tomatoes on the wrap throw on the mushrooms and the vege protein, garnish with corriander and wall-ah.. you have yourself a wrap even a retard could make.
